an archeaological challenge<\/span> <\/h4>\n\n\n\n

Gu\u00e9delon\u2019s woodsmen, carpenters, stonemasons and blacksmiths have built from scratch a working reproduction of a medieval hydraulic water mill.
This mill is the fruit of three years collaboration with the archaeologists from Inrap: French National Institute for preventative archaeological research<\/strong>. The mill is based on the archaeological remains of a 12th-century water mill found at Thevray in Jura.<\/p>\n\n\n\n

Following the same logic used in the castle-construction, all the different crafts on site worked together with the aim of producing the same quality of flour as that found in the Middle Ages. Set in a woodland clearing, just a stone\u2019s throw from the construction site, you can now visit this working mill.<\/p>\n\n\n\n

On certain dates, our baker offers you the chance to taste bread made with Gu\u00e9delon-ground flour and baked in the castle\u2019s bread oven. Please consult our calendar for details.<\/p>\n\n\n\n

a long-running partnership with Inrap<\/span><\/h4>\n\n\n\n

After the success of the mill project, we renewed our collaboration with Inrap in 2015 with the building of a working lime kiln. A lime burn lasts 72 hours round the clock and produces up to 11 tonnes of slcaked non-hydraulic lime.<\/p>\n\n\n\n

How to find us <\/h4>\n\n\n\n

Gu\u00e9delon is 2 hours south of Paris, in Yonne, in Northern Burgundy.
The site is on the D955 road between the towns of Saint-Sauveur-en-Puisaye and Saint-Amand-en-Puisaye.<\/p>\n\n\n\n

Gu\u00e9delon is 1 hour 45 minutes from Orl\u00e9ans, 2 hours from Dijon, 1 hour and 20 minutes from Bourges.<\/p>\n\n\n\n
